Quinoa and Turkey Stuffed Peppers

Well I know I promised an easy fish recipe and also my pudding pie recipe, but an unexpected snow day also found me in the kitchen concocting some new dishes including these quinoa and turkey stuffed peppers. I know, they sound almost healthy! Well, at least healthful. Did you know that quinoa is actually really high in protein? Yup, so you can eat these without guilt. Then go have some chocolate cake. Enjoy.

Quinoa and Turkey Stuffed Peppers

  • 3 red bell peppers
  • 1 lb ground turkey meat
  • ¾ cup cooked quinoa
  • 2 eggs
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1 ½ tsp oregano
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 ½ tsp salt
  • 1 tsp ground pepper
  • Olive oil


Preheat oven to 375 degrees.

Cut the tops off of peppers, and core and seed the peppers. Set aside the tops of peppers. Steam peppers for 3-5 minutes over simmering water.  While peppers steam, finely chop the tops of the peppers.

Heat olive oil in a skillet, and sauté onion with remaining red pepper until soft. Add garlic and spices. Gently crumble turkey into skillet and sauté until cooked through.

In a large bowl, mix together the cooked quinoa, turkey and vegetable mixture plus the two eggs. When combined thoroughly, spoon into the peppers.

Cook for 20 minutes. Sprinkle with fresh parsley before serving.
