Dill Latkes with Lemon Creme Fraiche

On the eighth night of Chanukah I finally got my act together and am posting my recipe for dill latkes with lemon creme fraiche and smoked salmon. Better late than never.

For Dill Latkes:

  • 10 yukon gold potatoes
  • 1 onion
  • 1/2 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 3 Tbsp salt
  • freshly ground pepper
  • 2 finely minced garlic cloves
  • 1/2 cup dill

Peel potatoes and place in large bowl with cold water. In a food processor, shred potatoes and onions. Mix shredded potatos and onions in large bowl with flour, salt, pepper, garlic and dill.

Heat a large saucepan with 1/4 inch of vegetable oil. Drain excess liquid from potato mixture, and form flat potato patties with hands. Fry latkes on each side until golden.

For Lemon Creme Fraiche:

  • 1 cup creme fraiche
  • 1 Tbsp grated lemon zest

Mix creme fraiche with lemon zest. Serve with latkes and thinly sliced smoked salmon. Enjoy, and Happy Chanukah.
