My sister, a beautiful and mere 18 years old, is currently in Israel for the year with Young Judaea Year Course. Living on her own, and cooking on her own for the first time, I am getting questions a lot these days about her daily preparations.
Q: “My penne vodka didn’t turn out the way I wanted it to? What do I do next time?”
A. There’s definitely a nice shortcut you can use for “penne vodka” and that is jarred sauced, something this Pizza Bagel doesn’t generally advocate for. But you know, if you’re cooking-challenged or 18, you get a free pass to go buy some sauce. Personally I like Barilla or Trader Joe’s.
Easy Penne with Vodka Sauce
1 jar store-bought tomato/marinara sauce
1/2 cup heavy cream
1/4 cup vodka
1 box of penne pasta
1 cup grated parmesean cheese
Boil water for pasta in large pot with a lid. Add 1 Tbsp of salt to water. Add pasta and cook for around 10 minutes.
In a saucepan, add sauce and let heat through. Add the vodka and let simmer. When you are ready to serve your pasta, add the cream, slowly. Serve with freshly grated parmesean.
For a more traditional recipe, I suggest Lidia Bastianich’s version, which you can find on Epicurious.
